Christmastime doesn't really arrive until the house is filled with the smell of freshly baked Christmas goodies. Whether you prefer gingerbread men, crisp springerle or crunchy biscotti, chances are you’ll enjoy some fresh baked Christmas fruit mince scones too. Like many Christmas traditions, the origin of this delicious custom lies ages ago, in solstice rituals conducted long before Christmas became the huge commercial holiday it is today.

Preheat oven to 180/Bake

INGREDIENTS
200g Self-raising flour
140g Fat-free yogurt
100ml Diet Sprite/Tonic or soda water
80g Tasti Old English Fruit mince
1/2 Teaspoon ground cinnamon
1/2 Teaspoon baking powder
2 Tablespoons natVia

Combine the self-raising flour, fat-free yogurt, diet Sprite, cinnamon, baking powder, natVia & fruit mince in a bowl, mix until the self-raising flour is mostly combined. Do not over mix as you don't want dense scones. The consistency should be soft & slightly sticky.

Turn out onto a lightly floured surface, knead gently once or twice. Gently pat the dough to your desired thickness, then using a cutter or wine glass start cutting the rounds from the dough. Carefully place into an ovenproof dish that has been lined with a WW ovenliner.

Brush the tops lightly with a drop of trim milk

Bake for 25 minutes or until golden. Place on a rack to cool.
