SICHUAN BANG BANG CHICKEN SALAD

Another absolute favorite salad is Sichuan Bang Bang Chicken salad. However, yesterday i decided to not add chicken as we had a roast leg of lamb but I still wanted this salad on the table BECAUSE it's the dressing that makes this salad so absolutely delicious!!! I purchased a pkt of coleslaw & replaced the slaw sauce with the home-made Sichuan dressing.

I have put the original recipe up with the chicken but if you decide to not add the chicken pls just adjust the SmartPoints.

Sichuan cuisine is a style of Chinese cuisine originating from Sichuan Province. It has bold flavours, particularly the pungency & spiciness resulting from liberal use of garlic, chili peppers & unique flavour of Sichuan pepper. I couldn't find Sichuan pepper, hence used a substitute which is 1/4 teaspoon black pepper corns & a 1/4 teaspoon coriander seeds which i ground finely.

INGREDIENTS
4 Chicken breasts, skinless

SAUCE
4 Tablespoons soy sauce
2 Tablespoons sesame oil
2 Tablespoons chilli oil
2 Tablespoons rice wine vinegar
1 Tablespoon natvia
1 Tablespoon sugar-free maple syrup
1 Teaspoon fresh ginger, grated finely
2 Garlic cloves, grated finely
1/4 Teaspoon black peppercorns, ground
1/4 Teaspoon whole coriander seeds, ground

If using chicken then steam the chicken for about 10 - 15 minutes. Remove & place in a bowl with ice cold water to stop the cooking process. Then, hammer the chicken with a rolling pin to flatten the meat and break it up into shreds....hence the name Bang Bang!

In the meantime, add all of the above sauce ingredients into a medium bowl. Stir until well combined.

In a large bowl, start adding your choice of salad, then add the shredded chicken. Season with salt to taste. Cover & refrigerate.
Before serving pour over the bang bang sauce which is so well balanced. A bit of sweet with a bit of tangy, spicy, and savory flavors. This is ABSOLUTELY delicious!
