Many stroganoff recipes are cooked low & slow using alot of butter, sour cream & cream to keep the meat tender. Stir-frying lightens the dish without losing the rich flour. This evenings dinner was a huge hit with the entire family. I served the stroganoff on a bed of fluffy cauli-rice. I didn't use sour cream, instead I opted for fat-free yogurt.
