For me, curry & any stew as a matter of fact is always about browning those onions well. My mother is the queen of browning onions. It's important that while browning your onions & sealing the chicken in your beautiful spices that niether burn. I usually do this on a hi heat & I always have 250ml of water on hand l to cool the pot when necessary.
