MY FESTIVE JEWEL BROWN RICE SALAD

INGREDIENTS
160g Brown Rice
100g Cyclops Yogurt, 99% fat free
50g Hellmans Light Mayo
1 Red oninon, finely chopped
1 Capsicum, finely chopped
1 Punnet mushrooms, sliced
1 Teaspoon oregano
1 Teaspoon sumac

Cook the brown rice according to pkt instructions. Drain & set aside. Fry the onions, mushrooms & capsicum. Then, add to the rice. Now, add the yogurt, mayo, oregano & sumac. Season with salt. Stir until well combined. Garnish with fresh pomegranate to add that bit of festivity. Add fresh coriander or fresh parsley.
