CHRISTMAS SUMMER PAVLOVA

No introduction required....the perfect Christmas dessert! This has probably been the most easiest thing that I have ever baked. It looks daunting but I promise you that it's really uncomplicated.

Ingredients:
6 Egg whites at room temp
1.5 Cups sugar
1 teaspoon vanilla essence
1 teaspoon white vinegar
2 teaspoon cornstarch
200g Cyclops Yogurt & 1 teaspoon vanilla essence

*Seasonal fruit for decoration

Preheat oven to 110 deg bake (NOT FAN BAKE)
Line a baking tray with a WW non-stick liner.

In a large metal,ceramic or glass dish beat the egg whites till soft peaks form. (Do not use a plastic bowl)
Continue beating while adding the sugar 1/4 cup at a time. The mixture should be glossier and thicker with each addition of the sugar.
This should take 10 minutes of beating in total.
Beat in vanilla, vinegar and cornstarch.
Spoon the mixture out onto the prepared tray.

Bake for 90 minutes. Turn the oven off and leave the pavlova in for a further 60 minutes. Then, remove from the oven, place onto a
cooling wire rack.
When completely cool, carefully move the pavlova onto a serving plate.

Add a teaspoon vanilla extract to the Cyclops yogurt, mix well. Spoon the yogurt on top, garnish with your favorite fruit. Dust with icing sugar.
