Easy to make, big on flavour & perfectly light after a decadent Christmas lunch.

INGREDIENTS
375ml Evaporated milk, reduced-fat
1 Sachet WW lime jelly
200g Fresh pineapple
17 Grams Nestle Peppermint Crisp

Refrigerate the evaporated milk the night before for best results.

Blitz the pineapple, set aside.
Add 50ml boiling water to the jelly powder, stir until all the jelly crystals are dissolved. Allow to cool.
Using an electric beater, beat the evaporated milk until it doubles in volume. Add the jelly solution, beat again. Add the pineapple, stir until all the ingredients are well combined. Pour into a deep pyrex. Grate the peppermint crisp over. Decorate with fresh mint.

Refrigerate for 3 hours or unti completely set.
